  • 2small zucchini, halved and thin sliced
  • 2small yellow squash, halved and thin sliced
  • 8 ouncebutton mushrooms, quartered
  • 1 pintcherry tomatoes, halved
  • 1/2red onion, halved and thin sliced
  • 1 lbasparagus, cut into bites size pieces
  • 1 cupSpanish olives, drained
  • 1 canmedium black olives, drained
  • 1 canartichokes, drained and quartered
  • 8 ozfresh mozzarella small balls, drained
  • 1 pkghard salami, thin sliced
  • 1/2 pkgsliced pepperoni
  • 1small bottle zesty Italian dressing
  • 1 cupshredded Parmesan
  • 3 TbspItalian seasoning
  • to tasteSalt & black pepper
  • 1 bunchfresh basil thin sliced

Steps

  1. 1

    Prepare vegetables and put in large bowl.

    Drain canned vegetables and add to bowl.

  3. 3

    Add all other ingredients and stir to mix.

  4. 4

    Refrigerate until ready to serve. Can be made the night before. Enjoy
