Ingredients

  1. 2small zucchini, halved and thin sliced
  2. 2small yellow squash, halved and thin sliced
  3. 8 ouncebutton mushrooms, quartered
  4. 1 pintcherry tomatoes, halved
  5. 1/2red onion, halved and thin sliced
  6. 1 lbasparagus, cut into bites size pieces
  7. 1 cupSpanish olives, drained
  8. 1 canmedium black olives, drained
  9. 1 canartichokes, drained and quartered
  10. 8 ozfresh mozzarella small balls, drained
  11. 1 pkghard salami, thin sliced
  12. 1/2 pkgsliced pepperoni
  13. 1small bottle zesty Italian dressing
  14. 1 cupshredded Parmesan
  15. 3 TbspItalian seasoning
  16. to tasteSalt & black pepper
  17. 1 bunchfresh basil thin sliced

Cooking Instructions

    Prepare vegetables and put in large bowl.

    Drain canned vegetables and add to bowl.

  3. 3

    Add all other ingredients and stir to mix.

  4. 4

    Refrigerate until ready to serve. Can be made the night before. Enjoy
