Ingredients

4 servings
  1. 50 gmushrooms
  2. halfa green pepper (capsicum)
  3. 6 tablespoonsvegetable oil
  4. 425 mLthe base curry sauce (see earlier recipe)
  5. 450 gchicken such as the base recipe in an earlier post
  6. 1 teaspoonsalt
  7. 1/2 teaspoonChilli powder - or more as desired
  8. 1green Chilli finely chopped
  9. 1/2 teaspoonred food colouring
  10. 1 1/2 teaspoonGaram Masala (see recipe posted earlier)
  11. 1 teaspoonground Cummin
  12. 1/2 teaspoondried Fenugreek
  13. 1 tablespoonfinely chopped Green Coriander

Cooking Instructions

  1. 1

    Wash the mushrooms and green pepper and sliced thinly

  2. 2

    Heat the oil in a large deep frying pan and fry the 4 to 5 minutes on a medium heat

  3. 3

    Add the curry sauce, chicken, salt, chilies and food colouring

  4. 4

    Turn up the heat and bring to the boil and continue cooking for about 5 minutes stirring frequently

  5. 5

    Turn down the heat slightly and stir in the garam masala, ground Cummin and fenugreek and cook for a further 5 minutes stirring now and again

  6. 6

    With the spoon dipped in cold water spoon off any extra oil and sprinkle with green coriander
