In a large mixing bowl, combine the lamb and beef. Knead together until well mixed. Add salt, spices, very finely chopped onion, and garlic. Knead for 5 minutes until fully combined, then refrigerate for 1 hour to firm up.

Prepare skewers and shape the kebab mixture onto them as desired.

Tip: You can skewer the vegetables separately from the kebab for easier grilling.

Note: The only difference between kofta and kebab is that kofta includes parsley.
