Something delicious for this not so appreciated fish. Give it a try😁
Steps

Divide the fish as u like, I fillet mine, it's easier to season. Sprinkle salt, & pepper on both side. Place in flour and set aside.
Blanch the spinach.

Add 2tbsp oil in a pan, once hot add the scotch bonnet, garlic & ginger, stir then place the fish, fry on both side until slightly crispy. Remove from pan, add in onions, tomatoes & fry.

Add cabbage & season, add curry and place the fish. Add sliced onions & oyster sauce. Cover cook for 10minutes, turn the fish after 5minutes.
To make the fries.
Sprinkle salt and mix, place the potatoes in egg, the flour. Deep fry slowly.
Serve with blanched spinach and fries.
Voilà!
