This dish is simple yet very delicious. I usually make it to eat with banh hoi (fine rice vermicelli sheets) or rice vermicelli noodles when I want something other than rice.

This dish is simple yet very delicious. I usually make it to eat with banh hoi (fine rice vermicelli sheets) or rice vermicelli noodles when I want something other than rice.

Slice the pork into thin, bite-sized pieces. Marinate with the prepared seasonings, some finely chopped shallots, and garlic for about 1 hour.

While the pork is marinating, make a garlic-chili fish sauce for serving with the banh hoi. Cut the lettuce into thin strips. Chop the scallions to make scallion oil. Prepare the banh hoi (if using dried banh hoi, soak in boiling water for about 5 minutes, then rinse in cold water for 2 more minutes until ready to use).

Heat a little cooking oil in a pan and sauté the chopped garlic until fragrant. Add the marinated pork and stir-fry until the meat firms up. Add a bit more sugar, oyster sauce, and black pepper. Continue to stir-fry until the pork turns a deep golden brown, then remove from heat.

Serve everything in a bowl and enjoy!
