Ingredients

6 persons
  • 1whole Chicken, 1.5 kg cut into 8 pieces. Wash
  • 600 ml(thin) & 300ml (thick, concentrated) can Coconut Cream
  • 600 mlWater boiled from the kettle: as needed
  • 2 tbsRice Bran oil, Alfa one brand
  • 3 cmfresh Kencur or 1/2 tsp ground Kencur
  • 3 cmfresh Ginger peeled, slice thinly
  • 1 cmfresh Turmeric,skin on slice thickly (1/2 tsp ground curry)
  • 3Candle nuts/Macadamia (Kemiri)
  • 1Lemongrass stalks, split in half, crushed on the white part
  • (see the image)
  • 3Bay leaves (daun Salam)
  • 4Kaffir lime leaves
  • 1Curry leaves (daun kunyit)
  • 2 tbssoft Brown sugar as needed
  • 1 tbsbouillon Chicken powder
  • 6Eggs (boiled 6' in salted water& peeled in cold water tap)
  • 3medium Potatoes, peeled & cut in chunks size, then put
  • on a double pot: steam for 19 minutes
  • 2cakes Bean Curds (Tahu), sliced, fried in hot oil until brown
  • 1/2 cupMelinjo fruits
  • 10shallots, slice thickly
  • 6 clovesGarlic, slice thickly
  • 1 tspground Coriander
  • 1 tspground Nutmeg
  • 10fresh red Chilies(leave 2 whole chillies whole as decorative)
  • 1/2 tspCayenne Pepper ground (mild hot)
  • 1 tbsbouillon Chicken
  • 2 tspSalt as needed
  • 1 tbsBlack pepper grinded
  • Kerupuk Emping 1 bag,bought raw from Asian market.Fry in hot oil
  • 1 handfulfried Onions, to sprinkle on top of serving dish
  • Jasmine rice cook in Rice Cooker or
  • 6Ketupat rice cakes (from Asian supermarket)cut in rough pieces
  • (see images)
  • Decorate: put 2 Basil leaves (or 2 stalks Coriander leaves)

Steps

    The spicy paste has to be fried first in a wok with 3 tbs hot oil:put shallots,garlic,ginger,galangal,turmeric,lemongrass,kencur, candle nuts,coriander,red chilies.Stir to fry untill well cooked (!) emanating aroma-fragrance! Remove. Put the fried spicy into blender, blend it until a smooth paste. Remove.

    In a wok on medium heat put 4 cups water, thin coconut cream, the spicy paste, chicken pieces, bay leaves, kaffir lime leaves,curry leaves, lemongrass, nutmeg,melinjo fruits, chicken stock powder, ground cayenne pepper, salt: stir to fry & mix. Keep stirring to avoid the coconut cream split, until the chicken is halfway cooked.

    Then add the rest the thick coconut cream while still stirring,add the cooked potatoes, prefried sliced bean curds,boiled eggs,sugar. Add more salt & more water if needed.

    When the casserole starting to boil, turn down the temp and let it simmer for 10 minutes or until chicken is cooked completely. Turn off, remove the wok. Transfer Opor Ayam onto a deep large rectangular glass dish. Sprinkle on top with dried fried Onions, decorate with 2 Basil leaves. To serve with steamed Jasmine Rice or Ketupat cakes. Side dish: crunchy cracker Kerupuk emping.

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking.
