I love baking bread at home as it ensures that the bread is free from preservatives and taste enhancers and the best part is I get to experiment with a lot of flavours and ingredients. I can add my favourite veggies and spices, that makes the bread more flavourful and healthy at the same time. I love sweet breads and zucchini bread being one of my favourites is made quite often at our home but the problem is that I want variety and that can only be achieved with experiments. So I wanted to try a savoury version of Zucchini bread to satiate my tastebuds and I wasn't surprised with the outcome as I knew it would come out great. The fragrance said it all...We were dying to taste it and couldn't wait for it to get baked but had to...haha!! It smelled awesome and made us drool even before it came out of the oven.
And when we finally tasted it, we(my husband and me) were lost in the array of flavours, looking at each other, talking only with eyes because our mouths were stuffed with this savoury goodness, we knew this experiment was a heat and proved to be a hearty meal for us. We had it for dinner with soup and layered it with veggies to make a delectable sandwich for next day's breakfast.

Ingredients

25-30 minutes.
5-6 servings
  1. 1 +1/2 cup whole wheat flour
  2. 1/2 cupoats flour
  3. 1 +1/4 cup grated zucchini
  4. 1/2 cupolive oil
  5. 1 tbspchia seeds soaked in 1/2 cup water
  6. 1/4 cupalmond milk/ dairy milk
  7. 1/4 tspgarlic powder
  8. 1/4 tsponion powder
  9. 1 tbspbaking powder
  10. 1 tspbaking soda
  11. 1 tspsalt
  12. 1/2 tbspcastor sugar
  13. 1 tbsplemon juice
  14. 1/2 tbsplemon zest
  15. 1 tbspItalian herbs or pizza seasoning
  16. 3/4 tbspchilli flakes

Cooking Instructions

25-30 minutes.

    In a mixing bowl combine whole wheat flour, oats flour, baking powder, baking soda, salt, sugar, garlic powder, onion powder, lemon zest, Italian herbs and chilli flakes. Now in another bowl mix rest of the ingredients (except zucchini) and mix well.

    Then combine the wet and dry ingredients and mix well with a spatula. Now fold in grated zucchini. Transfer the batter to the lined baking mould and bake for 25-30 minutes or until a toothpick inserted comes out clean and the crust becomes nice and golden brown. Take it out and let it cool. Slice it and enjoy.
