No need of buttermilk. Easy recipe to cook on a holiday.

In a big bowl: put milk & vinegar, stir together, set aside to 'sour' for about 5'. Then add egg and melted butter. Vanilla ectract and cinnamon and mix all. Set aside.

Into a small bowl put sifted flour, baking powder, sugar, salt, baking soda, and cinnamon and mix together with a big spoon. Pour dry ingredients of flour mixture into wet ingredients the milk mixture and whisk until batter is smooth. Set aside the batter for 20' to rest.

Heat a medium large non stick saucepan over medium heat and coat with a little butter or olive oil spray. Drop batter, 1/4 cup per pancake onto the saucepan and cook until bubbles form and the edges are dry, 3'-4'. Flip and cook until browned on the other side, 2'-3'. Put into a plate, cover with tea towell. Repeat with remaining batter.

To cover with tea towell over the cooked Pancakes to keep them warm. To serve: spread with butter and mixed berries jam, a dollop of whipped cream on the side.
