Cooking Instructions

Mix together the flour, salt, 15g sugar and 175g butter using your hands until coarse crumbs are formed. Do NOT KNEAD.

Then add water slowly and mix to create ball shaped dough. Put in fridge to chill for about 20 minutes.

Add flour to surface and roll out the dough so it is thin and cut out 12 round circles so they can fit into the tart tin tray.

Grease your tart tin trays with the unsalted butter or use grease proof paper. Then add the cut circles onto the tray

Place trays into the oven gas mark 4, (180 C). Allow them to bake for approximately 10 minutes until golden brown.

In the meantime melt 50g butter and 20g sugar into a pan. Then add the corn flakes and the golden syrup and mix slowly so all flakes are coated.

Take the tray out of the oven and add one spoonful of jam to each circle. Add a layer of cornflakes on top of the jam on some if you wish. Then put the tray back into the oven for another 10 minutes.

Remove the tray and them to cool before serving. Best served with vanilla custard, enjoy ;)

This Jam Tart recipe was my mom’s idea, actually she has been asking me for days to make it and since she is only here for a few more days, I said sure but we needed to find Apricot Jam. 🙂 As usual my mom wanted to do everything by herself so all I did was take the pictures and look after the tart while it was baking in the oven. It was a cloudy, very chilly, windy day so natural light was definitely not in the cards for taking pictures. 🙂Most Greek recipes almost always have many different versions…but this recipe that my mom made is truly much simpler to make. I myself have made this tart with more added ingredients like almonds, vanilla extract but it just wasn’t the same as the simple Jam Tart I already knew. 🙂 The homemade crust has a lovely buttery and crispy taste to it which I am sure if you love eating tarts you will love this. 🙂 Foodzesty -
