Grease cookie sheet with the butter; set aside. In a medium saucepan, put the sugar, salt and water. Cook over high heat, without stirring, until sugar begins to melt and turn golden. Continue to cook until sugar has melted and mixture turns golden amber.

Remove pan from heat. Stir in peanuts. Immediately pour peanut mixture onto buttered cookie sheet. Quickly spread mixture to 1/2 inch thick using an oiled spatula. Let cool completely before breaking brittle into pieces. Serve and store in an airtight container.
