Ingredients

  • 8Chicken drumsticks, skin on
  • 1 C.Water
  • 1/2 C.Balsamic vinegar
  • 1/3 C.Soy sauce
  • 2 1/2 Tbsp.Sugar
  • 1Garlic clove, peeled and smashed
  • 1Small hot chili pepper, slit open and seeds removed

Steps

  1. 1

    Place all the ingredients in a saucepan on high heat.

  2. 2

    Bring to a boil, then reduce heat and simmer for about 20 Min.

  3. 3

    Remove any scum that rises to the surface.

  4. 4

    Increase the heat, turn the drumsticks frequently in the liquid.

  5. 5

    Cook until the liquid has reduced to a sticky glaze. There will not be a whole lot of the glaze.

  6. 6

    Arrange the chicken on a serving platter. Remove the garlic and chili from the liquid and spoon the glaze over the chicken.

I am a 42 year old diabetic that was told by the doctors that I needed to go on insulin. I refused and have been keeping my blood glucose under control with diet. I will try to keep adding recipes but I don't measure and constantly experiment to find good flavor with no grains and sugar, so it may take me a while before I write a recipe with measurements and pictures.
