Indonesian Beef Tripe Soup (Soto Babat)
Cooking My Dad's Recipe is so much make me emotional because make miss him so much , special because this dish is he's favorite food 😥💖

Boil tripe until tender. Remove and dispose of the cooking water. Cut the tripe according to taste. Set it aside.
Saute the spices together with lemongrass, bay leaves, ginger and orange leaves until fragrant and cooked. Add the tripe and chives. Mix well.

Add beef broth and sugar. Cook until boiling and reduce the heat, leave it until it's ready and all the spices are evenly distributed and the taste is right.
Prepare bean sprouts, glass noodles, cabbage and boiled eggs in a bowl. Flush with hot soup and give tomatoes, fried onions and celery leaves. Serve with rice, chili sauce and other side dishes.
