Ingredients

  • 500 grambeef tripe (I buy already clean and ready to cook)
  • 2litter water
  • 2Indonesian bay leaves (salam leaves)
  • 5kaffir lime leaves
  • 1lemon grass, bruised
  • 2spring onions, chopped
  • 1/2 teaspooncoriander seed
  • 1/2 tablespoonground white pepper
  • Salt and sugar to season
  • Spices (ground)
  • 3shallots
  • 6garlic cloves
  • 3candlenuts
  • 1 cmgingger
  • 3 cmturmeric roasted
  • Complements:
  • 100 gramglass noodles (soak in the hot water)
  • 50 grambeen sprout
  • 40 gramsliced cabbage
  • 1 tablespoonfried shallots
  • Lime
  • Sweet soy sauce
  • Boil eggs (optional)
  • Sweet soy sauce
  • Chilli sambal

Steps

    Boil tripe until tender. Remove and dispose of the cooking water. Cut the tripe according to taste. Set it aside.

    Saute the spices together with lemongrass, bay leaves, ginger and orange leaves until fragrant and cooked. Add the tripe and chives. Mix well.

    Add beef broth and sugar. Cook until boiling and reduce the heat, leave it until it's ready and all the spices are evenly distributed and the taste is right.
    Prepare bean sprouts, glass noodles, cabbage and boiled eggs in a bowl. Flush with hot soup and give tomatoes, fried onions and celery leaves. Serve with rice, chili sauce and other side dishes.
