Boil your matumbo till soft, this might take sometime but the secret is boil it with the ginger and garlic paste

All the water should be drained. Then add oil and fry till they are crunchy, add onion and continue cooking

Add tomatoes, green pepper and cook till soft, add the cubes then add a cup of water and simmer for about 15mins. By this time it should be ready.

Sprinkle chopped coriander and serve with ugali and greens
