In this recipe Arbi roots are fried and than cooked in spicy and delicious yogurt gravy.
Steps

Wash arbi roots under tap water to remove dirt.

Put washed arbi in pressure cooker with sufficient water and pressure cook for 1 whistle

Once cool down,peel the arbi and cut into big cubes.

Heat oil in a kadai and add arbi cubes for deep frying.

Fry arbi cubes till golden and crispy.Remove it in on oil absorbent paper and keep aside.

Heat add 2 tbsp oil on medium heat in another pan.

Add mustard seeds,cumin seeds,big cardamon and hing to hot oil.

When seeds starts to splutter add garlic,chopped onion and cook until onion turns translucent.

Now add ginger and pureed tomatoes and saute again for 2 minutes.

Add haldi powder,garam masala,red chilli powder and fry till oil separate from masala.

Add yogurt,mix it well.Stir it continuously until it starts boiling.

Add water and boil the gravy again,while stiring continuously.

Now add fried arbi cubes,kasuri methi,salt to taste and mix well.

Cook it for 3-4 minutes on medium to low heat.

Colocasia curry is ready turn of the heat and garnish with coriander leaves.
