Beetroot Raita

Beetroots are one of the healthiest vegetables. They boost your stamina, has anti-cancer Properties, supports your liver, and are rich in valuable nutrients and fiber.
This raita can be had as an accomplishment for pulav, rotis, or just as a meal replacement.

Cooking Instructions

Wash clean the beetroot. Peel and cut into very small pieces. Alternatively you can also shred it.

Microwave the beetroot for a minute to soften it. You can skip this step if you like chewy beetroot. Alternatively you can fry the shredded beetroot in a tsp oil for 3 minutes.

Roast and powder the peanuts coarsely. Add this to beetroot.

Beat the curd smoothly and add it along with the salt to the beetroot. Mix everything well.

This raita can be served right away. You can add a tadka to it if you like it. I like it with tadka only.
