Ingredients

15 minutes
4 servings
  1. 4Eggs :
  2. 6 piecesButton Mushrooms:
  3. 2 mediumOnions finely chopped
  4. 2 Tomatoes finely chopped
  5. 1 tsp Garlic minced
  6. 1 tspGinger minced
  7. 1/4 tspTurmeric Powder
  8. 1 tbspKashmiri Chilli powder
  9. 1 tspRed Chilli Powder
  10. 2 tbspCoconut milk
  11. 1/2 tsp Crushed Peppercorns (Optional only if you want dish to be spicy)
  12. 1 tbspOil
  13. 3 tbspCoriander leaves

Cooking Instructions

15 minutes
  1. 1

    Boil the eggs, deshell and cut into half

  2. 2

    Heat oil in a pan and saute the chopped onions till it turns to translucent.
    Add ginger and garlic and saute for couple of minutes until the ginger garlic gives off it's aroma.

    Add Tomatoes, mushrooms along with salt and saute.
    Now add all spice powders and saute till the raw smell is gone.

    Add 2 tbsp coconut milk and half cup of water, allow it to cook well

  5. 5

    Add the boiled eggs, coriander leaves and toss it well

  6. 6

    Cook it on a low heat for 4-5 minutes, stirring occasionally. Remove from the heat.
    Delicious Egg Roast is ready to serve as side dish with string hoppers or Nool appams Enjoy!
