Steps

Boil the eggs, deshell and cut into half

Heat oil in a pan and saute the chopped onions till it turns to translucent.
Add ginger and garlic and saute for couple of minutes until the ginger garlic gives off it's aroma. - 3
Add Tomatoes, mushrooms along with salt and saute.
Now add all spice powders and saute till the raw smell is gone. - 4
Add 2 tbsp coconut milk and half cup of water, allow it to cook well

Add the boiled eggs, coriander leaves and toss it well

Cook it on a low heat for 4-5 minutes, stirring occasionally. Remove from the heat.
Delicious Egg Roast is ready to serve as side dish with string hoppers or Nool appams Enjoy!
