Fry carrots, onion and celery in a pan in a little oil. Peel and chop potatoes. Bring to the boil in a pot of salted water

Add mince and brown

Add tin of chopped tomatoes. Stir and cook for a few minutes

Add stock cube, a little water and frozen peas. Simmer on low for about 20 - 25 mins. Turn on the oven to 200 towards the end

Roll out pastry into a round tray. Prick with a fork. Add mince and spread around. Drain potatoes when cooked and mash with some butter

Add mash on top of mince

Turn the edges down. Run a fork across the mince to decorate. Add a few little knobs of butter on top. Glaze pastry with beaten egg

Bake for about 20-25 mins. Leave on a wire rack for 10 mins before serving :)
