Steps

Wash palak thoroughly.Add palak to boiling water for hardly 2 mins. Take out and keep it in iced cold water.

Later divide this into two parts

Roughly chop one part and make puree of another.Keep aside

In a pan, add desi ghee when heated add jeera.

When it splutters, add chopped onions and roast till golden brown.

Add garlic paste and chillies.

Roast till raw smell goes away.

Add besan and roast till nice aroma comes out from mixture.

Add chopped palak. Mix and simmer for 1 min.

Add palak puree and masalas, salt mentioned above.

Mix and add some water and let it simmer for 10 mins.

Make tadka of mentioned ingredients. Pour it on gravy.

Let the gravy sit for 10 minutes.

Serve hot with rice, paratha or roti.
