Ingredients

(विधि)
  1. मैदा -500 ग्राम (5 कप)
  2. देशी घी या रिफाइण्ड तेल -125 ग्राम (आधा कप से थोड़ा ज्यादा)
  3. अजवायन- एक छोटी चम्मच
  4. नमक- स्वादानुसार
  5. बेकिंग सोडा- 2 पिंच (यदि आप चाहें)
  6. रिफाइण्ड तेल - तलने के लिए

(विधि)
  1. 1

    मैदा में घी /तेल, नमक और अजवायन डालकर अच्छी तरह मिला लीजिए,और पानी की सहायता से सख्त आटा गूथ लीजिए गूंथे हुए मैदा को 20 मिनट के लिए सैट होने के लिए ढक कर रख दीजिए।

    कढ़ाई में तेल डालकर गरम करने के लिए गैस पर रखे गूंथे हुए मैदा से अंगुलियों की सहायता से थोड़ा सा मैदा निकाले और गोल करके बेलन से बेले, इसमें चाकू से 5-6 छेद करदे और प्लेट में रखें,

    फिर दूसरी मठरी को भी इसी तरीके से तैयार करें,5-6 मठरिया इसी तरह तैयार कर लें, और अब‌ इन्हें तेल में डालें, धीमी आग पर तलें जब तक यह मठरिया सिकती हैं तब तक और 5-6 मठरिया बेल कर तैयार कर लें कड़ाही में मठरिया जब ब्राउन हो जाये तब उन्हें निकाल लें और एक प्लेट में पेपर नैपकिन बिछा कर रखें।

    अब दूसरी बार बेली हुई मठरीया तेल में डाल दें और उसी तरह तलें ब्राउन होने पर इन्हें भी निकाल लें, और प्लेट में रखें, इसी तरह सारी मठरिया बना कर तैयार कर लिजिए।

    खस्ता कुरकुरी मठरी तैयार है, इन्हें गरमा गर्म चाय के साथ खाइये और बची हुई मठरीयो को ठंडा करके एअर टाइट डिब्बे में बंद करके रख लिजिए,1महिने तक कभी भी जब आपकी इच्छा हो निकालिये और खाइये।
