Ingredients

  • 2.2 lbs (1 kilogram)khanom jeen noodles (fermented rice noodles)
  • 1.1 lbs (500 grams)coarsely ground pork
  • 1.1 lbs (500 grams)pork spare ribs
  • 2 blocksboiled chicken blood
  • 1.1 lbs (500 grams)small tomatoes
  • 10dried red cotton tree flowers (soaked until soft)
  • 3 tablespoonsfermented soybean paste (or use miso if unavailable)
  • 1/2 cup (120 ml)vegetable oil
  • Curry Paste:
  • 10small dried red chilies
  • 10cilantro roots
  • 10 clovesgarlic
  • 10small shallots
  • 3 tablespoonsshrimp paste
  • 2 teaspoonssalt
  • Toppings:
  • Fried garlic
  • Cilantro
  • Green onions
  • Fried dried bird’s eye chilies
  • Pickled mustard greens
  • Bean sprouts

Steps

  1. 1

    Bring water to a boil and add the pork spare ribs. Simmer until the ribs are tender.

  2. 2

    Pound all the curry paste ingredients together until smooth.

  3. 3

    Sauté the curry paste in vegetable oil until fragrant. Add the fermented soybean paste or miso and stir to combine.

  4. 4

    Add the ground pork and cook until it is no longer pink.

  5. 5

    Add the sautéed curry paste mixture to the pot with the pork ribs. Bring to a boil, add the soaked cotton tree flowers, and simmer for about 20 minutes or until the pork is very tender.

  6. 6

    Add the cubed boiled chicken blood and stir gently to combine.

  7. 7

    Add the chopped tomatoes.

  8. 8

    Continue to cook for about 5 minutes.
