Creamy Orzo
Orzo is a pasta that looks like rice. This dish is popular with both kids and adults. In my house, they love it because it's delicious, easy, and quick.
Steps
- 1
Bring a pot of salted water to a boil and cook the orzo until al dente, about 8-10 minutes. Reserve 1 cup of the cooking water and drain the pasta.
- 2
Meanwhile, heat the oil in a skillet over medium heat and add the shallot and garlic. Sauté for about 2 minutes.
- 3
Add the diced tomatoes and cook for about 8 more minutes. Stir in the heavy cream and peas. Add the pasta and mix everything well, then remove from heat. Stir in the grated cheese and mix everything together. Add a little of the reserved pasta water until you achieve a creamy consistency. Season with enough salt and pepper.
