Cook the chicken in water with the cilantro, 1/4 of the onion, and some chicken broth.

Separately, boil the tomatoes to easily remove their skins.

In a skillet, toast the peanuts and dried chiles. Set aside.

Fry the tortilla and the French roll in a little oil.

Blend the peanuts, chiles, tomatoes, tortilla, French roll, and the remaining onion with a little of the chicken broth. (Start with a small amount of broth; add more gradually until you get a creamy consistency—not too thin or too thick.)

Place the chicken on a plate and pour the peanut sauce over it.

Serve with white rice if desired.
