Ingredients

30 minutes
Serves 4 servings
  • 1boneless chicken breast, cut into 4 pieces
  • 1 cupshelled peanuts (about 150 grams)
  • 3dried chile de árbol peppers
  • 3medium tomatoes
  • 1/2medium onion
  • 1garlic clove
  • as neededchicken broth,
  • 1/2small French roll (bolillo)
  • 1/2corn tortilla
  • 1 sprigcilantro

Steps

30 minutes
  1. 1

    Cook the chicken in water with the cilantro, 1/4 of the onion, and some chicken broth.

  2. 2

    Separately, boil the tomatoes to easily remove their skins.

  3. 3

    In a skillet, toast the peanuts and dried chiles. Set aside.

  4. 4

    Fry the tortilla and the French roll in a little oil.

  5. 5

    Blend the peanuts, chiles, tomatoes, tortilla, French roll, and the remaining onion with a little of the chicken broth. (Start with a small amount of broth; add more gradually until you get a creamy consistency—not too thin or too thick.)

  6. 6

    Place the chicken on a plate and pour the peanut sauce over it.

  7. 7

    Serve with white rice if desired.
