Ingredients

  1. 300 gramsbrinjals chopped long
  2. 1.5 cupsyoghurt
  3. 1 tablespoonsaunf powder
  4. 1 teaspoondry ginger powder
  5. 1/3 teaspoonturmeric powder
  6. 1/3 teaspoonred chilli powder
  7. 50 mlwater
  8. 1/4 teaspoonhing
  9. 5-6cloves
  10. 5-6green iliachi
  11. to tasteSalt
  12. as requiredFresh coriander leaves for garnish
  13. 2 teaspoonsOil

Steps

  1. 1

    Brush the chopped brinjals with oil and sprinkle some salt and airfry them for 5-10 min at 180 degrees in airfryer.

  2. 2

    Take a wok sprayed with oil, add cloves, green cardamom,hing till it crackles.

  3. 3

    Mix the dry spices with water and make a paste.

  4. 4

    Add the spice paste to the wok and roast the spices well till oil starts leaving from the sides.

  5. 5

    Remove pan from heat, add the whisked yogurt and mix well. Place pan back on low heat and keep stirring constantly to avoid curdling.

  6. 6

    Add the airfried baigan pieces to this. Adjust salt according to taste. Cook on low heat for 5-7 mins.

  7. 7

    Garnish with fresh coriander leaves and serve hot.
