But apart of these, ukdiche Modak, kothimbir vadi, thali peeth, misal, aamti, pachadi are also famous & common in Maharastrian cuisine. The use of freshly ground masalas ( spices ) like Goda masala , Malvani masala & Kala masala is the right light of Maharastrian cuisine.
Kothimbir vadi is a delicious savory crispy snack made with gram flour & coriander leaves as key ingredients. In Marathi language "Kothimbir" means kothmir aka coriander leaves & "vadi" means cubes or wedges.

Cooking Instructions

Dry roast peanuts, once cool down remove it's skin with rubbing palms. Then grind it in coarse powder.

Take a bowl add dry ingredients, paste, grinded peanuts & coriander leaves into gram flour. Mix well, add water & prepare thick paste like batter.

In greased plate or thali,transfer prepared batter, cook in a steam like dhokla on a low medium flame till it cooks properly.

Cut in square, once it cools down.

Now in a non stick pan or skillet,add little oil & place few squares over it. Cook from both sides, till they become crispy.

Serve hot with chutney & ketchup.
