I do love baking too and sometime goes for a proper traditional British baking like this Scottish shortbread. So yummy with a cup of tea, hot chocolate or warm milk.
Cooking Instructions

Have your oven on at 180’ or gas mark 5. Beat butter and sugar until smooth. Add vanilla essence.

Add flour and mix it well in the mixing bowl. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.

Cut into rectangle shape and place onto a baking tray. Use a fork to press down lightly to make the pattern. Sprinkle with caster sugar.

Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack. It’s simply delicious 😋

My version adds toffee bits and a blend of chocolate topping. The darker you cook the caramel the firmer it will become. My bars have a soft consistancy. I was able to make something that approached his expectations, but was limited by the butter I used and was troubled by the fact that I couldn't improve it further with the ingredients I had on hand. I wonder if these would turn out better if I used the butter they have over in Scotland.Try to use caster sugar. You can use either salted or unsalted butter. Please remember to reduce the amount of salt by a pinch when using salted butter. Using cultured butter will improve the flavor.
