I love love love any kind of Taco and I love any kind of fish or recipe with prawns in. I have tried not to go mad and kept this version as healthy as possible, I am sure even further alterations can be made to make it even leaner. I have used white mini tortilla wraps here but I really like to use the Beetroots ones as the colours look so great. Enjoy x #mycookbook

Ingredients

  1. 2mini tortilla wraps
  2. 1small piece of haddock
  3. 4king prawns
  4. 1/2an avocado
  5. 1/2lime
  6. handfull shredded red cabbage
  7. 1/2red onion
  8. 1necatrine thinly sliced
  9. 1radish thinly sliced
  10. few rocket leaves and coriander leaves
  11. tbspflour
  12. 1 tsppaprika
  13. 1 tspginer
  14. 1/2 tsptumeric
  15. 1 tbspfine breadcrumbs (optional)
  16. 1red chilli
  17. spicy chilli sauce
  18. oil and vinegar

Cooking Instructions

    Preheat oven to 200. Firstly pop your red cabbage and red onion in some oil and vinegar (more vinegar than oil) and set aside.

    Next slices your haddock into chunky strips and toss in the spices, flour and breadcrumbs, do the same with your prawns and set aside.

    When your oven is ready in a tray add a small amount of oil and pop it in the oven for 1 mim, remove and add the fish, after about 3/4 mins add the prawns. Put your tortilla wraps over the bars on a different shelf in your oven so the sides hang downwards to create a taco shape.

    Whilst your fish is cooking which should take about 8mins, make some avocado sauce by whizzing your avocado in a blender with a sml drizzle of oil, salt, pepper,chilli and lime.

    Take your fish and tacos out of oven and build your taco, Mine goes like this, rocket, red cabbage and red onion avo sauce, fish and prawns, sliced nectarines, more sauce and some spicy chilli sauce on top finished with some radish x
