Do you know that taco rice is invented in Japan?
As we love rice, why don’t we change the tortillas to rice?? That’s how it became one of the soul food in Okinawa and it’s as good as normal taco so give it a try!

Ingredients

  1. Taco meat
  2. 2 tbsOlive oil
  3. 1 poundground beef
  4. 1canned beans (I used pinto)
  5. 1medium yellow onion minced
  6. 3 clovesGarlic minced
  7. 3 tbsKetchup
  8. 1 tbsSoy sauce
  9. 1/2 tspkosher salt
  10. 1/2 tspBlack pepper ground
  11. 1 tspground cumin
  12. 1 tspground paprika
  13. 1/2 tsporegano
  14. 1/2 cupwater or any broth
  15. Salsa
  16. 1large tomato small diced
  17. 1/2yellow onion minced
  18. 1 clovegarlic minced
  19. 1/2 tspkosher salt
  20. 1/2 tspground cumin
  21. HalfLemon juice
  22. 2 tbsCilantro finely chopped
  23. Rice
  24. 2 cupsrice
  25. 1/4 tspturmeric
  26. Water to cook rice
  27. Other ingredients
  28. Green salad (baby spinach or lettuce)
  29. Cilantro for garnish
  30. 1avocado sliced

Cooking Instructions

    Set rice as you normally cook and just add turmeric into the pot before start cooking.

    To make salsa, put all the ingredients into a bowl and combine well. Leave in the fridge until ready.

    Heat a pan with olive oil and cook onion and garlic until onion is translucent. Then add meat and cook for 2-3minutes and add all the other ingredients. Cook for about 5-10mins. Taste it and adjust with salt and soy sauce as you need.

    Put rice in a bowl and some green of your choice and add taco meat and salsa and avocado on. Cilantro as garnish.

I lived in Okinawa for many years in Chatan Cho by Kadena AFB
I LOVED their taco rice ...I'm happy to see their authentic recipe here,Thankyou. Honestly I love so many of their dishes, it's hard to pick just one! Lol
