  • Taco meat
  • 2 tbsOlive oil
  • 1 poundground beef
  • 1canned beans (I used pinto)
  • 1medium yellow onion minced
  • 3 clovesGarlic minced
  • 3 tbsKetchup
  • 1 tbsSoy sauce
  • 1/2 tspkosher salt
  • 1/2 tspBlack pepper ground
  • 1 tspground cumin
  • 1 tspground paprika
  • 1/2 tsporegano
  • 1/2 cupwater or any broth
  • Salsa
  • 1large tomato small diced
  • 1/2yellow onion minced
  • 1 clovegarlic minced
  • 1/2 tspkosher salt
  • 1/2 tspground cumin
  • HalfLemon juice
  • 2 tbsCilantro finely chopped
  • Rice
  • 2 cupsrice
  • 1/4 tspturmeric
  • Water to cook rice
  • Other ingredients
  • Green salad (baby spinach or lettuce)
  • Cilantro for garnish
  • 1avocado sliced

    Set rice as you normally cook and just add turmeric into the pot before start cooking.

  2. 2

    To make salsa, put all the ingredients into a bowl and combine well. Leave in the fridge until ready.

  3. 3

    Heat a pan with olive oil and cook onion and garlic until onion is translucent. Then add meat and cook for 2-3minutes and add all the other ingredients. Cook for about 5-10mins. Taste it and adjust with salt and soy sauce as you need.

  4. 4

    Put rice in a bowl and some green of your choice and add taco meat and salsa and avocado on. Cilantro as garnish.

I lived in Okinawa for many years in Chatan Cho by Kadena AFB
I LOVED their taco rice ...I'm happy to see their authentic recipe here,Thankyou. Honestly I love so many of their dishes, it's hard to pick just one! Lol
