ثابت چکن پر گہرے کٹ لگائیں اور اسے اچھی طرح دھو کر ایک تسلے میں رکھیں اور سفید سرکہ اور زردے کا رنگ ملا کر چکن پر اچھی طرح لگا دیں۔

اب دہی میں لال مرچ ،کالی مرچ ،سفید زیرہ، نمک اور چرغہ مصالحہ اچھی طرح ملائیں۔

پھر دو سے تین لیموں کی مدد سے یہ مصالحہ چکن پر اچھی طرح لگا دیں۔

جب سارا مصالحہ لگ جائے تو مصالحہ لگی چکن کو ایک بڑی دیگچی میں رکھ کر اس کا اپنا پانی خشک کرلیں

پھر بڑی کڑاہی میں تیل گرم کریں اور چکن کو ڈیپ فرائی کرکے گولڈن براؤن کریں۔

اس کے بعد چکن کو دوبارہ دیگچی میں ڈال کر لیموں کا رس شامل کرکے پانچ منٹ دم پر رکھ دیں ۔مزے دار لاہوری چرغہ تیار ہے۔

I confess I didn't make the dough myself, but I loved thinking of creating a new and different topping, combining local ingredients like olives, capers and tuna with a hot sauce made a bit creamy with some Greek yoghurt.
