I wasn't aware that addition of cheese to the delicious aloo tikki will make it even more yummilicious. Served with spicy green chutney, meethi chutney and yoghurt . It's lip smacking tasty.

Ingredients

  1. For the tikki
  2. 3potatoes boiled peeled and mashed
  3. 2 tbspcornflour
  4. 3/4 TSPsalt
  5. 1/2 TSPred chili powder
  6. 1/2 TSPhaldi/Turmeric powder (optional)
  7. 2 tbspchopped green coriander leaves
  8. 1 tbspchopped green chillies optional
  9. 1/4 cupgrated mozzarella cheese
  10. As neededOil to deep fry
  11. For the Hari chutney
  12. 1 cupgreen coriander
  13. 1/4 cupmint leaves
  14. 2-3green chillies
  15. 4-5garlic cloves peeled
  16. 1/2onion roughly chopped
  17. 1/2tomato roughly chopped
  18. to tastesalt
  19. 1/2 TSPbhuna jeera(roasted cumin) powder
  20. 2 tbsplemon Juice
  21. 1/2 tspblack salt
  22. For the meethi chutney
  23. 2 tbspamchor (dry mango)powder
  24. 1 cupsugar
  25. 2 cupswater
  26. 1 TSPsalt
  27. 1 TSPdegi red chili powder
  28. 1 TSPbhuna jeera(roasted cumin) Powder
  29. 1 pinchblack salt
  30. For the yoghurt
  31. 1 cupcurd
  32. 1/2 TSPsalt
  33. 1/4 TSPred chilli powder
  34. 2 tspGreen coriander leaves for garnishing

Cooking Instructions

    To make the tikkis in a big bowl combine all the ingredients other than oil and cheese. Mix well. I have added haldi as the cheese is white and when we cut the tikki a contrast of yellow and white looks good.

    Heat oil in a kadai. Fry a small ball of the prepared potato mixture to check if it's breaking. If it breaks add some more cornflour.

    Now divide the potato mixture into 7-8 portions. Make rounds of each portion. Press the ball to make a cavity. Fill some cheese in the cavity. Make a ball. And flatten it a little.

    Deep fry the tikkis 2-3 at a time.

    For the green chutney, grind coriander, mint, green chillies, garlic, onion and tomato in a grinder. Add salt, lemon juice, bhuna jeera powder and black salt.

    For the meethi chutney, mix amchoor, sugar and water. Bring the mixture to a boil in a heavy bottomed pot.

    Sieve the mixture in a glass bowl. Add salt, red chili powder, bhuna jeera and black salt.

    For the yoghurt, whisk the curd, along with salt and red chili powder till smooth. You can add 1/2 TSP sugar if you like for taste.

    Serve freshly fried tikkis with chutneys and yoghurt. Enjoy.

    This is how I enjoyed it. With some green chutney spread on a well roasted toast. Crushed the tikki on the top. Drizzled lots of meethi chutney and ketchup on the top. Absolutely heavenly.
