If you’re like me, If you use corn tortillas for anything, you always seem to have so many left over and never get around to using them all. This is a great recipe to use some of them and is very simple to make. The original recipe called for cooking your own boneless skinless chicken breasts but I went an easier route with frozen pre cooked chicken. I also added a can of sweet corn. So feel free to customize to your own liking. This recipe feeds a lot of people or leaves plenty leftovers;-)

Ingredients

  1. 2 cans (10 3/4 ounces)Condensed Tomato Soup
  2. 2 cupsChunky Salsa or Original Picante Sauce Medium
  3. 1 cupmilk
  4. 22 ozbag of fully cooked, diced, oven roasted chicken breast
  5. 16corn tortilla(6-inch), cut into 1-inch pieces
  6. 2 cupsshredded fiesta/Mexican blend cheese (or more if you want:) )
  7. 1 cansweet whole kernel corn (optional)

Cooking Instructions

45 minutes

    Heat the oven to 400°F. Stir the soup, salsa, corn, milk, chicken, tortillas and half the cheese in a large mixing bowl & then pour mixture into 5 quart (11 by 13) shallow baking dish.

    Cover the baking dish. Bake for 45-50 minutes or until the chicken mixture is hot and bubbling. Top with the remaining cheese. Let stand until the cheese is melted.

    Enjoy:-) This feeds a big crowd.

I am a married, stay at home Mom with two teens, 17 & 19 as well as a new baby. I love trying new recipes. I love this app and all the wonderful recipes I've found using it over the years. Not a big fan of posting recipes but I will try to get a few on here, eventually:) I do try to take pix of recipes I've cooked from here (if the recipe doesn't already have several posted) because I'm a visual person, so I understand folks wanting to see the finished product;)
