A very popular dip from the Middle Eastern Cuisine is this spicy dip that's used alongside many a Barbeques, Kabsa, Mandi, Majboos, Faham Bukhari and many others. It's a bit spicy but not too much either because of the use of long Green Chillies that are mildly spicy. But yes, many prefer it a little extra spicy too and therefore increase the number of Chillies accordingly. It has to be blended but not for too long. This way, very small pieces can be seen in the dip. There is no harm in blending them just coarsely. But if you want an all finely blended one, it can be very well kept to that texture also. In other words, it can be called as an Arabian Salsa. Give it a try with your favourite food next time for a pleasant change.

Cooking Instructions

Add all of that to a blender jar. Blitz until pureed to a semi thick consistency.

Actually it's a bit coarsely done sauce or dip.

And not too watery or thin. Therefore a semi thick consistency is always perfect. Serve it with Arabic Pilaf or Kabsa. Enjoy!

Thick, creamy, spicy, garlicky, packed with flavor and full of artichokes. What more could you ask for? So, after making this recipe far too many times, I've come up with quite a few notes about it:+ Use the shredded cheese of your choice. I generally use a creamy white cheddar, but I have had success with many other cheeses.+ You can use canned green chiles, but in my experience, the canned varieties tend to taste tinny. If you'll be roasting at home, you'll need 3-4 large fresh chiles placed over an open flame or under the broiler.+ 4 ounces of green chiles provides just enough kick. You'll want to keep in mind that canned chiles are generally more mild. The best way to be certain you're not making it too spicy or too mild is to taste as you're going along. I love enough spice to kick your socks off, so I go for an entire cup (8 ounces) of freshly roasted chopped green chiles! Izandro -

People rave about this, really!Here in Texas, the tex-mex restaurants will sometimes serve a green sauce along side the red sauce. Sometimes it's good, sometimes it's great, but sometimes, not so good. I started down a road to create a really good one. So I started modifying recipes until I hit on this combination.My youngest daughter, who doesn't like avocados, chilies or cilantro, loved this dip, Go figure. I always have to make a double batch when she is here.Not too difficult to make, with a food processor, but a blender or even mortar would work.This is easy enough to adjust to your taste. The garlic can add a bite to it so adjust as you like. You can use bell peppers, no need for heat, add mild chillies instead of the jalapenos. Not spicy enough, use hotter peppers. I would even guess flat leaf parsley could be subbed for the cilantro if fresh cilantro is not available in your area. Fo Fa -

It has quite a bit of garlic, so if you're not too crazy about garlic, reduce to 3 cloves. If using canned beans, use two 15oz cans and drain well. Follow the rest of the recipe as normal.I make my bean dip with 6 chiles, which yields a spicier result. For your dip, you can follow these rough guidelines:2 chiles=mild3 chiles=medium4 chiles=medium spicy5 chiles=spicy6 chiles=SPICY!For a smokier flavor, use 1-3 chipotle peppers in adobo depending on the degree of spiciness you want. It'll definitely be a crowd pleaser!This dip is delicious served chilled, at room temperature, or piping hot. My personal preference is served hot. Simply transfer the dip from the blender to a small saucepan. Bring to a simmer and cook for a couple of minutes until thoroughly heated. Beans burn easily, so stir frequently! Izandro
