Ingredients

30 mins
4 people
  1. 3large handfuls chopped coriander, including stalks,
  2. Handfulfresh mint leaves,
  3. 1heaped tsp smooth peanut butter,
  4. 3-5green chillies to taste, (I used 3),
  5. 1/2 tspground cumin,
  6. 1 inchfresh ginger, peeled,
  7. 4whole cloves garlic, peeled,
  8. 1 tbspLemon juice,
  9. Pinchsalt, to season,
  10. 6 tbspwater
  11. Equipment needed:
  12. 1food processor or blender

Cooking Instructions

30 mins
  1. 1

    Add all the ingredients to a blender (except the water), and blitz in bursts at first then blend fully for a couple of minutes until a thick and fragrant paste is formed.

    Add in the water and blend until a slightly runny and textured consistency is created. It should be like a thin paste that's spreadable.

  3. 3

    Transfer into a small sterilised jar and keep in the fridge until ready to eat.

    Serve up with your chosen dish. Ideal as a dipping sauce or condiment, lovely in a cheese sandwich or with cheese on toast. Also fabulous eaten with eggs. Enjoy! :)
