This is a fabulous way to prepare carrots, sweet with a hint of honey and aniseed from the fennel seeds. These go particularly well with my 'Feta And Bulgur Wheat Patties' (see previously posted recipe).

Honey Glazed Roasted Carrots With Fennel

Ingredients

30 mins
2-3 people
  1. 3large carrots, ends trimmed off, cut lengthwise into strips,
  2. 1 tbsprunny organic honey,
  3. 1 tspfennel seeds,
  4. 1 tspsea salt,
  5. 1 tspground black pepper,
  6. 1 tbspolive oil

Cooking Instructions

    Par boil the carrots for 4 minutes to soften them a little, drain off and pat dry Preheat the oven to 180 (fan). In a bowl add the carrots and the olive oil and toss until they are evenly coated in a thin layer.

    Using a mortar and pestle crush the fennel seeds, sea salt and pepper together to release the aroma of the spice. Add in with the oil coated carrots and toss through.

    Lay the carrots out in a roasting tray and roast on the middle shelf of an oven for 20 minutes. Remove briefly then drizzle over half the honey. Roast for a further 8-10 minutes. Toss and move about then add the rest of the honey over the top. Roast again for around another 5-8 mins. Eat and enjoy! :)
