I LOVE ginger, so I wanted more of a kick than most recipes offer. I even add a bit of ginger power to onions when frying to get a nice spice for the soup.☺️ (sorry, forgot to take pretty photo in the bowl- this one is from freezer)

Ingredients

  • 5carrots
  • 4 cupsbroth
  • 3 clovesgarlic
  • 2 tbspolive oil
  • Halfan onion
  • 3-4 tbspchopped ginger
  • sweet potato or squash
  • Optional turmeric

Steps

  1. 1

    Bake sweet potato and carrots in olive oil 20 minutes at 400 degrees/ (200 celcius)

    Fry onion and garlic and ginger in olive oil.

    Add all to slow cooker with broth and cook.

    Blend once cool
