Lettuce boat tacos are a favourite of mine. They make such a delicious lunch or evening meal and are extremely versatile. Here is a favourite combination I like to put together for maximum flavour and minimal effort. I've used lean beef mince, but this can easily be substituted for a meat-free alternative such as Quorn or tofu or another protein such as chicken pieces or even king prawns.

Ingredients

  1. 10outer gem lettuce leaves, washed,
  2. For the filling:
  3. 320 glean beef mince or another alternative protein,
  4. 200 gsachet of either cauli-rice or riced sweet potato,
  5. 8cherry tomatoes, cut into halves,
  6. 6closed cap mushrooms, diced,
  7. 8heaped tsp tinned sweetcorn,
  8. 2 tspperi peri or fajita style spice blend seasoning,
  9. 1 tspsmoked paprika,
  10. 1 tspgarlic granules or 2 crushed cloves,
  11. Salt and ground black pepper to season,
  12. Frylight cooking spray for frying,
  13. To top/garnish:
  14. Peri peri style sauce or hot sauce of your choice,
  15. 1little grated cheese (optional),
  16. 2 tbspnatural yoghurt,
  17. Sliced brined Jalapeños,
  18. Crispy onion bits (can buy in most supermarkets in a tub)
  19. A fewcorriander leaves to garnish (optional)

Cooking Instructions

    Heat up a large frying pan and add in the beef mince (or alternative) and spray over some cooking oil. Cook until browned off then add in the cauli-rice or sweet potato sachet contents, the mushrooms and tomato halves. Season with salt and pepper. Add in the spices and stir through. Cook for a couple of minutes.

    Add the sweetcorn and mix through then remove from the heat. Take the lettuce leaves and arrange out onto two plates or shallow sided bowls. Spoon in the mixture equally between the leaves.

    Top each with a little cheese, then drizzle over some hot sauce, plus a little dollop or two of yougurt followed by the crispy onion pieces and jalapenos, then lastly garnish with a few corriander leaves. Enjoy!
