Ingredients

  1. 4 lbspotatoes
  2. 1 boxchicken broth
  3. Salt & pepper to taste
  4. 3 clovesGarlic
  5. Shredded cheese
  6. Bacon
  7. Chives
  8. 1small Onion
  9. 5 stalksCelery
  10. 2 cupsHalf & half
  11. Crushed red pepper. If you like a little spice

Cooking Instructions

    Peel and dice potatoes. Put diced potatoes into the bottom of a 6-quart slow cooker.

    Top diced potatoes with chopped onion, garlic and celery.

  3. 3

    Add chicken broth, salt and pepper. Broth will not completely cover potatoes.

    Cover and cook on a high setting for 4 hours or until potatoes are tender.

    To speed up the process, you can precook the potatoes by boiling them then add them to the slow cooker.

    Mash mixture with a potato masher. (Don't mash completely, leave some potato chunks.)

    Stir in half and half. And add cheese.

    Cover and cook on high setting 20 more minutes, or until mixture is thoroughly heated

    Ladle into bowls and garnish with your favorite toppings
