Khaman Dhokla or simply khaman has its roots in Gujarat. It's one of the most sought after breakfast dishes. In most parts of the country especially North and West it's enjoyed as a tea time snack. It's highly nutritious as it's made with besan which is rich in protein and at the same time it's healthy as it's steamed. It's light airy and soft texture makes it everyone's favourite young and old alike.

Ingredients

40-45 minutes
2-3 servings
  1. For the dhokha
  2. 1 1/2 cup of besan
  3. 1 cupwater
  4. 1 TSPcitric acid
  5. 3/4 TSPsalt or as per taste
  6. 1/8 TSPhaldi
  7. 1 tbsppowder sugar
  8. 1 tbspoil
  9. For the tadka
  10. 2 tbspoil
  11. 1 TSPmustard seeds
  12. 12-15curry leaves
  13. 2-4green chillies
  14. 1/2 TSPhing
  15. 1 cupwater
  16. 1-2 tbspsugar
  17. 2 tbsplemon juice
  18. Other ingredients
  19. 2-3 tbspchopped coriander
  20. 2-3 tbspgrated fresh coconut

Cooking Instructions

    To make the dhokhla, we will first sieve the besan in a mixing bowl.

    Now add all the ingredients to the besan except water. Mix well.

    Now add half a cup of water and mix very well in one direction.

    Once all is mixed add the other half of the water and mix gain in one direction for 3-4 minutes. It should have a smooth consistency now.

    Now Cover and keep aside the batter for one hour.

    In the meanwhile grease a 6 inches round mould and keep your steamer ready.

    After one hour add 1/2 Tsp baking soda and mix very nicely in one direction for one to two minutes.

    Pour the batter in the mould and steam for 25-30 minutes.
    I made double the quantity hence it looks so much.

    Once the dhokla is ready it will leave the sides also check by inserting a knife if it comes out clean the dhokla is done.

    Let it cool completely. Unmould and cut into smaller pieces.

    Heat 2 tbsp oil in a tadka pan. Add the mustard seeds and let them crackle.Now add the curry leaves.

    After few seconds add hing and green chillies. Mix. Pour the water and add the sugar as well. Let it come to a boil. Remove from fire. Add lemon juice and mix.

    Pour the mixture over the dhokla pieces nicely. Garnish with chopped green coriander and grated coconut. Let them sit in the fridge for half an hour before serving. Enjoy your tasty and healthy snack green and mithi chutney.
