Ingredients

  1. 4chicken breasts skinless and boneless
  2. Salt and pepper to taste
  3. 2 tbsoil
  4. 1 tspdried thyme
  5. 1 tspdried rosemary
  6. Peri Peri Sauce:
  7. 1 red capsicum
  8. 3 clovesgarlic, minced
  9. 6red bird eye chillies
  10. 1/2 tbspcrushed red pepper flakes
  11. 1 tbspsmoked paprika
  12. 1/4 cuplime juice
  13. 1/4 cupoil
  14. 1 tbspvinegar

Cooking Instructions

    To make the peri-peri Sauce
    Place all the ingredients in the bowl of a small food processor and process until pureed..

    Marinate chicken with thyme, rosemary,salt and pepper to taste. Place the chicken in a large sealable plastic bag. Add the peri-peri sauce and close. Rub the bag to coat the chicken in the marinade then refrigerate for 4 hours, or overnight.
    Remove the chicken from the bag and drain off the excess marinade.

    Heat oil in a grill panover medium high heat. Place chicken in the pan and brown each side until nice golden color. Turn off the heat..Remove chicken from the pan,, Cooking time is depend on the size of chicken.. Serve with peri peri rice Sauce Fries etc... Enjoy
