Ingredients

Preparation time-15 mins, Cooking time-1 hr
2 servings
  1. For Khichuri
  2. 1 cupGobindobhog rice
  3. 1 cupMoong Dal
  4. 1 inch ” ginger paste
  5. 1medium size onion chopped fine
  6. 10-12cashew nuts
  7. 1 tspcoriander powder
  8. 1 tspcumin powder
  9. 1 tspgaram masala powder
  10. 1 tspturmeric powder
  11. as per tasteSalt
  12. 1 tspwhole garam masala
  13. 1bay leaf
  14. 1whole red chilli
  15. 1 tspcumin seeds
  16. 1 Tbspghee
  17. 2 Tbspoil
  18. 4 Cupswater
  19. 1 tsproasted cumin powder

Cooking Instructions

Preparation time-15 mins, Cooking time-1 hr

    In a wok roast the Moong Dal until light brown in colour. Add rice to it and soak for 30 mins. Drain and set aside

    In a wok heat oil and lightly fry the cashew nuts and set aside. Add chopped onions and deep fry. Set aside.

    In the same wok heat more oil and ghee and add whole garam masala, bay leaf, whole red chilli and stir for few seconds. Add ginger paste and cook until raw smell leaves. Add coriander powder, cumin powder, turmeric powder and garam masala powder and stir until oil surfaces. Add 1/4 cup water and mix

    Add Rice and Dal together and cook well. Add 4 cups hot water and cook until boil comes in, add salt and stir. Cover and cook for 20 mins on low flame

    Water should be absorbed and add fried onions, cashew nuts fried and stir well. Add roasted cumin powder and cover for 4-6 mins.

    Plate with Begun Bhaja o Papad and enjoy
