My Lemon Drizzle cake
One of my personal favourites, it’s up there with a good coffee and walnut cake or a carrot cake with cream cheese icing..👌🏻😋 #tasteofhome
Cooking Instructions

Finely zest the lemon. Just the outer bright yellow skin, don’t go to deep. Preheat oven to 180c. (170c fan)

Measure out all your ingredients. The flour and baking powder can go together. The butter (pop in microwave for 20seconds) and sugar can go together.

Cream the softened butter and sugar together until light and fluffy. Add lemon zest.

Beat in one egg at a time and a little of the flour until fully combined and a smooth batter is formed.

Line your loaf tin with buttered parchment. Place all the mixture in and bake for 35-40minutes approx. Until golden brown, use a skewer to check it comes out clean.

I like to skewer it all over to create holes for the drizzle to seep into. Allow to cool a little

For the drizzle- juice and sieve the lemon. Mix thoroughly with the sugar and spoon over the still warm sponge. Leave to cool.

One of the reasons we fell in love with our house was the garden, with its fig, apple and plum trees. I think the plum variety is Jubilee, but she's a temperamental old thing and in recent years has flowered and fruited biennially.This year has been a fallow year. Usually by now I'd have made endless jars of jam (my favourite recipe being plum and earl grey), ice cream, crumbles, compote, and cake after cake after cake - anything to use up the vast quantities that fill every bowl we own.. But I've been more selective this year, buying just a few to eat or use as we choose rather than out of necessity.Having said that, I've made this cake three times this week, tweaking the recipe a bit here and there until it's just about perfect. Plums seem to take on a different personality depending on what you put them with - I do love a versatile fruit - and my favourite combination is plum and rose.I have a lovely recipe for plum and rose jam, which'll have to be put away for next year.
