Cooking Instructions

First take fresh bottle gourd. Peel a squash and cut it into small pieces. Remove the soft part from the middle of the bottle gourd & grate it with big grater. Now lower all the water from the bottle gourd as much as possible with the help of a water cloth.

Now take a pan. Add 2 tsp of ghee and heat. Then add a grated bottle gourd in this hot ghee, close the lid of the pan for 2 minutes and let it simmer. Now add 1 cup of milk to the bottle gourd and close the lid and let it cook properly. Now when all the milk is gone, add 2 bowls of sugar and mix everything.

Now all sugar are melted..Then add almonds, cashew nuts and pistachio pieces. Now add cardamom powder and mix everything. (You can also add 500 grams of khoya as you wish.) Then add a coconut powder and mix everything well.

Now add milk powder and mix everything well. Then add pinch of green food color. The color of the bottle gourd will change. Now add 1 tsp ghee and shake the mixer. Adding ghee, this mixer will leave the pan and it will get darker in colour. So turn off the gas flame. Now grease a large dish with ghee. Now spread Burfi mixer in this dish with a spoon. Keeping the thickness of the burfi is medium.

Now garnish the burfi with almonds, cashew nuts and pistachios. Then keep the burfi in the refrigerator for 1 hour to set. Now our burfie is frozen. So now cut it into square pieces. Now our very delicious Lauki Burfi is ready to eat.
