Called palmiers, pig's ears, palm hearts, or elephant ears, they are the simplest, easiest, and quickest cookies in my repertoire. But only make them if you find puff pastry made with butter!

Ingredients

30 minutes
24 palmiers
  1. 3/4 cupsugar
  2. Pinchsalt
  3. 1puff pastry sheet (made with butter), cold

Cooking Instructions

    Preheat oven to 450 degrees.

  2. 2

    Mix sugar and salt in a small bowl. Pour half the mixture on a cold flat surface. Distribute in an area similar to the puff pastry sheet.

    Put puff pastry on sugar and pour the other half of sugar over the puff pastry.

  4. 4

    Roll a rolling pin with some pressure so as much sugar as possible adheres to the puff pastry.

    Fold the sides of the square towards the center so they go halfway to the middle. Sprinkle sugar left on the counter over pastry. Fold them again so the two folds meet exactly at the middle of the dough. Again, sprinkle sugar left on the counter over pastry.

    Then fold 1 half over the other half as though closing a book. Slice the dough into 1/2-inch slices and place the slices, cut side up, on a baking sheet lined with parchment paper. Sprinkle remaining sugar on the counter over raw palmiers.

    Bake for 12 minutes or until the desired color is achieved.
