Ingredients

2 hrs 10mins
  1. 2.25 kgturkey crown
  2. 6unsmoked rashers
  3. 1 tbspeach fresh parsley and thyme
  4. 1/2 tbspfresh sage
  5. 100 gbutter softened salt and pepper to taste

Cooking Instructions

  1. 1

    Preheat oven 190°c

  2. 2

    Chop herbs finely and add to softened butter mix well

  3. 3

    Place turkey into roasting pan and lift up skin on breast meat,put half of the butter under the skin and push it around

  4. 4

    Put the remaining butter ontop of breast,then top with rashers

  5. 5

    Cover with foil and cook for 1 hrs then based well, base every 15 afterwards

  6. 6

    When 20 mins remains uncover remove rashers and allow to brown

  7. 7

    Continue cooking until it has internal temperature of 75°c
