Ingredients

30 minutes
4 - 5 servings
  1. 1 cupboiled green peas
  2. 3 cupsroughly chopped fresh fenugreek / Methi leaves
  3. 3-4 tbspghee / oil
  4. 2medium onion
  5. 6-7garlic pods,
  6. 3-4 green chilli,
  7. 1 inch ginger
  8. 3 tbspbroken cashews
  9. as required 1 bay leaf, 3 cloves, 3 cardamom, 1/2 tsp cumin seeds, 1 small cinnamon
  10. 1/2 cupfresh cream,
  11. 3/4 - 1 cup milk + water as required
  12. 1/2 tspgaram masala,
  13. 1 tsp coriander powder,
  14. as per taste salt
  15. 1/2 tspsugar

Cooking Instructions

    Roughly chop onion and assemble all ingredients

    In pan add 1 tbsp ghee, fry / sauté chopped Methi by adding salt and fry till water evaporates, it takes around 10 minutes.

    In pan add 1 tbsp ghee, add chopped onion + green chilli and sauté till pinkish or translucent, then add ginger + garlic + cashews and sauté for 3-4 minutes. Add 1/2 cup water and simmer / cook for 4 - 5 minutes and let it cool.

    Now grind it to a smooth paste by adding slight water.

    In pan add 1 tbsp ghee / oil, add all whole spices, let them crackle and then add the smooth paste. Add coriander powder + salt and cook for 2-3 minutes.

    Now add boiled green peas + sautéd Methi, mix well. Add milk and cook for 3-4 minutes under cover.

    Add garam masala + cream and mix well, also check for salt.

    Add sugar and Cook for 2-3 minutes, if gravy seems too thick then warm water can be added.

    Now Methi Matar Malai is ready to serve.
