Miso Salmon with Sautéed Leeks
Eating a lot of salmon and a bit bored with the usual so tried something with some flavours from Japan.
Cooking Instructions

Rinse the leeks, then finely slice and add to a pan with 1/2 tbsp butter and a dash of water on a medium-low heat. We’ll be sautéing these for 10 minutes or so while we prepare the salmon so keep the heat in check. Add a bit of water as needed if the look dry

Preheat the oven to 180C, and meanwhile mix 1 tsp of the puréed ginger with the soy sauce in a small bowl

Lay your salmon fillets in a lightly oiled baking dish and spoon over the salmon, then put in the oven for 10 minutes.

While the salmon is baking, mix the remaining butter, ginger, the miso paste and rice vinegar into a smooth paste

When the salmon is nicely cooked take it out of the oven and spoon on the miso mixture, and return it to the oven for a couple of minutes

Plate up the salmon on a bed of the sautéed leeks, garnish with some parsley and serve!
