Simple Pista Phirni

Today on Eid, I knew I had to make something sweet. But instead of making sheer khurma, (that I make every year), I decided to make some simple pistachio Phirni, flavoured with cardamom.

Just a handful of ingredients is all you need to whip up this simple dessert. I'd love for you to give it a try!

Ingredients

  1. 3 cupsfull fat milk
  2. 4 tbsprice
  3. 4cardamom pods
  4. 3 tbspsugar
  5. 15-20pistachios

Cooking Instructions

    Soak rice in lukewarm water for 30 mins. If you have time, then you can soak in regular water overnight as well.

    Once soaked, roughly blitz them in a blender. Make sure to not make a paste. Keep it aside.

    Boil milk in a pan and then simmer for 2-3 mins.

    Using a mortar and pestle, crush the cardamom pods.

    Add cardamom to the milk and let the milk simmer on low flame for 7-8 mins.

    Remove the husk of the cardamom pod from the milk.

    Add soaked and blitzed rice to the milk now and mix. Cook for 7-8 mins on low flame.

    Once the rice is cooked, it'll thicken.

    Add sugar and cook for another 2-3 mins on low flame.

    Using a blender, blend pistachios to get a coarse powder.

    Pour the phirni in earthenware and then garnish generously with ground pistachios.

    Chill in the refrigerator for 30 mins and serve.
