The name of this dish, "three cup chicken", refers to the way we cook it. 👉 A cup of the each ingredient which make the sauce: rice wine, soy sauce, and sesame oil.

It's so easy because you can cook the whole process in one pot. Just add a bowl of white rice and your dinner will be ready!

Please also check out my tip to make butterflied chicken drumsticks!! By doing this, you can make the chicken crispier on the skin surface, more flavourful until inside with much less cooking time!! ⏰

Ingredients

40 mins
2 people
  1. 600 gChicken drumsticks (Make butterflied chicken drumsticks)
  2. 4Garlic cloves
  3. 4 slicesGinger
  4. Basil (I added less this time as I used basil leaves from my plant, but it's ideal to add more leaves)
  5. Enoki mushrooms (optional, I added because it was a leftover from the day before)
  6. 2 table spoonSesame oil
  7. 2 table spoonSake
  8. 2 table spoonSoy sauce
  9. 70 mlWater

Cooking Instructions

40 mins
  1. 1

Crush the garlic with a knife and roughly chop them. Slice ginger and prepare 4 slices. Heat 2 table spoons of sesame oil in a pan and stir fry garlic and ginger until fragrant over the low heat.

  2. 2

Make butterflied chicken drumsticks. Place the skin down, use a knife to make a slice in the chicken along the side of the bone. Make a second cut on the other side of the bone. Open it up with your hands and make sure it becomes flat.

  3. 3

Start grilling skin-side down. After 5 mins of cooking over the medium heat, once the skin gets slightly brown, turn over the chicken. Cook again for 5 mins. Add enoki muchrooms.

  4. 4

Pour the soy sauce and sake over the chicken and add water. Cover with a lid and cook for 10 mins over the medium heat.

  5. 5

Pick basil leaves from the plant, wash well and add in the chicken. Stop the heat after 1 min.
