Lebanese Style beef Lungs, kidney, heart and vegetables - CookEveryPart

My dad back home wakes up some Sundays around 5:00 AM, once the butchers open to go and buy the offals while they're very very fresh, and then we share them with the whole family!
People race to get those parts in the morning before anyone else especially for Eid al Fitr and Eid Al Adha.
This recipe is a family favorite. You can cook with lungs or heart only or you can mix everything together!

Cooking Instructions
- 1
Slice all the different organs into bite sized cubes
- 2
Sautee the meat with bay leaves on oil in a deep pot or pan until browned
- 3
Add the onions with the spices, mix and let it cook on medium heat for 5 minutes without covering the pot because that will get the water of the meat out (especially the heart’s) and make it very dry and hard to chew
- 4
Add the potato cubes and cook for another 5 minutes, then add the grated tomato and tomato paste mixed in 3 cups of water. Mix well to combine all the ingredients
- 5
- 6
Cook on low heat for around 30minutes. Eat with flatbread
Tips

Cleaning cow lungs before cooking WITHOUT washing #CookEveryPart
My mom used to argue with my grandma whether to wash the lungs before cooking or not. My grandmother wouldn’t wash, and my mom only got convinced when the butcher himself told her not to wash the lungs because it’s like a sponge, if it absorbs water it’ll become very soggy.

Cleaning cow heart for cooking #CookEveryPart
Beef heart should be cleaned very well before cooking because it’s full of all the blood and fat. It’s not that hard to do so. Just a few steps, and the heart will be ready to cook. (You’ll need: cow heart, 1 cup white vinegar, knife, running water)

When to add vegetables to offals
If you’re cooking offals like beef heart, lungs, liver you should sautée them first until brown, then add the vegetables like onions, potatoes… because those organs are bloody in general and you should not add the vegetables with them in the same pot if they’re still raw. Otherwise, the vegetables will be covered a d cooked in blood and their taste will not be that good in the end.

Klaya (Tunisian braised meat) Klaya (Tunisian braised meat)
This is a dish for special occasions! In Tunisia, we often cook it on Eid Al Adha day. Cooks will usually add in the liver, heart, spleen and meat of the day's sacrificial lamb. There are variations across different cities and homes but what makes this dish special is the very slow cooking without any added water. Cooked on coal, this dish would normally take 3 to 4 hours in a traditional earthen pot (like the Moroccan tajine) but in the kitchen it'll take less time. The preparation is quite simple but you need to be patient!!Shahya Tayba Houssem -

Spinach and Paneer Indian Curry Spinach and Paneer Indian Curry
Everyone will love this curry, and you'll eat so much spinach!! I feel like my family eats this whenever they're in a good mood. You can also use a lump of cottage cheese in place of the paneer; this tastes great with just spinach if you can't find it, or, with a simple internet search, you can find many ways to make your own. For 3-5 servings. Recipe by Guri cookpad.japan -

Authentic Indian-Style Beef Curry Authentic Indian-Style Beef Curry
I adapted a curry recipe that a neighbor taught me to make this authentic curry. This is the type of curry I ate growing up. You can make it with beef, pork, chicken, ground meat or whatever meat you like. These days I like making it with ground meat for a Keema style curry and eating it with naan.-You can use beef, chicken or any other meat you like. Chicken will taste quite light.-If you use a pressure cooker, the meat will become tender easily.-As it simmers, the soup in the pot will reduce, so add water if needed.-If you toast the chopped onion in a toaster oven for 15 minutes or so before sautéing, it will caramelize quite easily.-You can use garlic and ginger from tubes, but freshly grated tastes and smells better.-This curry is also delicious with naan instead of rice. For 7 to 8 servings or so. Recipe by Gonyonyo cookpad.japan
