Balinese Betutu Spiced + Sweet Soy-Chilli Sauce Grilled Ribs

Back in 2015, when I attended university in Bandung, Indonesia, I used to eat frequently at this local food stall called Warung Aji Anom. They served the best Balinese foods: betutu chicken, betutu duck, and ribs.

The ribs, man. Their ribs were something else: otherworldly tasty, fingerlickingly good.

The chicken and duck were spiced with pure betutu (https://en.wikipedia.org/wiki/Betutu), but I think the ribs weren't. The ribs were spiced kind of similarly, but also somewhat sweet and hot, which made me think they must be spiced with betutu AND THEN grilled with sweet soy-chilli.

For the betutu part, I got the inspiration from https://youtu.be/xbqmFlV7p_M (video is in Indonesian). However, there was no recipe for "Betutu & sweet soy + chilli sauce ribs" everywhere, so this is a moonshot for my current cooking level.

Nevertheless, they turned out so good! If you have the time and are curious about local Indonesian dishes, I really recommend this one.

  1. Main ingredient
  2. 1 kgribs with bone
  3. sea salt (use coarse)
  4. Betutu spices
  5. 200 grshallot
  6. 150 grgarlic
  7. 45 grturmeric (I use 2.5 tsp of ground turmeric)
  8. 40 grginger, peeled & crushed
  9. 30 graromatic ginger (I couldn't find one, so I added a little more ginger)
  10. 50 grgalangal, peeled & crushed
  11. 100 grbig red chilli
  12. 2 tspfermented shrimp paste/belacan/trassi
  13. 1 stalklemongrass
  14. 2 cubesvegetable broth
  15. 2 tspsea salt (use fine)
  16. 1 tspblack pepper
  17. 1/4 tspsugar
  18. water, enough to dilute the betutu spice until the ribs are drowned
  19. Spices to be added before boiling the betutu
  20. 4bay leaves
  21. 6lime leaves
  22. 3 stalkslemongrass
  23. Sweet soy-chilli sauce
  24. 50 mlsweet soy sauce
  25. 5 clovesshallot, cut into 1 mm rings
  26. 3 clovesgarlic, cut into 1 mm rings
  27. 1/2small tomato, diced into 0.5 cm pieces
  28. 1lime, squeeze
  29. 5-10cayenne peppers (adjust the spiciness)
  30. 1 dashsea salt

Cara Membuat

    Take out the ribs from the fridge. Then season the ribs with coarse sea salt.

    Prepare all the ingredients for the betutu spice.

    Put all the ingredients into the blender. Add a little water then blend until the spices are thoroughly smooth.

    Don't forget to add the vegetable broth! Don't add the salt and pepper yet here.

    Pour the blended betutu spices into the pot. Since I'm using a pressure cooker, I pour the blended spice into a pressure cooker pot. Add 7 cm of water (roughly until the ribs can be drowned).

    Add the salt and pepper. You want to be able to taste the spices and yet have the spice mix be around 60 per cent as salty as you would like. Later on, the spice mix will be absorbed by the ribs during the cooking process.

    Add the bay leaves, lime leaves, and lemongrass.

    Then, add the ribs.

    Turn on the pressure cooker. We use *Meat/stew* settings for 35 minutes.

    If you're not using a pressure cooker, you can simply boil the betutu spice and ribs for 2-3 hours until the meat is easily separated from the rib bones.

    While waiting for the ribs to cook, make the sweet soy-chilli sauce. Simply mix all the ingredients.

    Pre-heat the oven to 200°C.

    Take out the ribs when they are done.

    Put the ribs on a baking tray lined with foil.

    Brush the sweet soy-chilli sauce onto the meat.

    Put the tray into the oven. Top heat is ideal! Grill for 8-9 minutes.

    If you can grill with fire directly, that would be much better.

    Take out the grilled ribs. Enjoy!!!
