Ingredients

  1. A   🥣 Prep & Measure
  2. 3-4tomatoes 🍅
  3. 1brown onion 🧅
  4. 2garlic 🧄
  5. 1 tbspflour (heaps)
  6. 1 tbsptomato paste
  7. 2 Cliquid (1 1/2 C milk + 1/2 C thickened cream)
  8. 💡thickened cream is not a must but it does elevate the taste
  9. B   🥣   Seasonings
  10. 1-2 tspvegetable broth powder or mushroom powder for vegetarian version /chicken bouillon for non-vegetarian
  11. 1 tspsugar
  12. To taste - salt

Cooking Instructions

    📝👉🏻 We don't usually measure our ingredients. Writing this for kids & friends.
    📝👉🏻 We always make this soup using fresh tomatoes
    📝👉🏻 We use vegetable broth powder, mushroom seasoning powder or chicken seasoning powder or chicken bouillon alternately depending on the type of dishes we prepare as we hv friends & family who are vegetarian. See pic below. This type of seasonings replace the actual broth to our soup. Instead we add milk for added creamy taste.

    A - Prepare and measure all ingredients.

    🍅 How to peel tomatoes:
    •Cut a cross into the base with a knife.

    Put tomatoes into a bowl and cover with boiling water.

    Set aside until skins lift.

    Transfer to a bowl of ice water.

    Set aside to cool.

    When cool, peel skins off & chop roughly

    Heat 3 - 4 tbsp of olive oil in a deep pan. Sauté chopped brown onion and garlic until aromatic or translucent. Turn the heat down. Stir in 1 tbsp of plain flour. Mix well then add 1 tbsp tomato paste and chopped tomatoes. Over medium heat, keep stirring, cooking for at least 5mins and everything is cooked.

    Add 1 1/2 C of full cream milk and 1/2 C thickened cream. Stir to mix and simmer for few mins.

    B - Next, Season, first, with vegetable broth powder/ mushroom powder/ chicken seasoning powder or chicken bouillon. Stir to mix. Leave to cool slightly.

    Transfer everything to a blender. Blend well into a smooth puree. Return blended mixture to the pan. Stir and Simmer for few minutes. Taste. Add salt if needed. Adjust seasoning accordingly. Turn off the heat and serve warm with croutons. Click on the link to check our homemade croutons.
